1  Happy Cinco de Mayo!

2  I won't give a history lesson this year. I would, however, like to wish everyone a safe holiday with family and friends. 

3  One of my faves. San Jose cuts loose every year, and the place is pretty festive. I'm interested in enjoying stuff up here in Sac.

4  Thursday is always an automatic Friday when it is a celebration, so do be safe, but don't let that stop you from having lots and lots of fun!

5  I'm making some home-made posole/pozole, one of my favorite health foods. I'm also adding a salad/ensalada. Someone posted an easy way of using hard avocados when making a good guac.

6  It's easy.

8  Just kidding. 

9   It was actually a pretty fun post, because it had you wrap the avocado in aluminum foil, bake it, cut it, slice it, and then cut it into strips. THEN you squeeze it into a bowl.

10  Come to think of it, I think that idea was from that gringa Martha Stewart. Maybe not. I have always picked softer avocados, but ones on the greener end. Then I have fun mashing them up and messing with them. I make a great guac, but it requires garlic and a gun handle. 

11 I learned to cook by watching. And then tasting. So I'm gonna get going in the kitchen today. I always love Cinco de Mayo. 

12  So fun. I might even toss some mini-tacos into the mix. 

13  And to all my Mexican friends: Enjoy this day. It is always about family, laughs, babies, and fun. Oh, and margaritas. And yes, you salt the rim.
